Easter At Little Toader's House

Easter has always been my favorite holiday. It always felt like a time of renewal and a reminder that even though it may seem like something has come to a tragic end that God has beauty for our ashes. The colors are bright, the flowers are in bloom, and life just feels brighter on Easter.

The festivities and the celebratory Easter feast leave so much to look forward to each year. As a child, I remember waking up to my Easter basket, going to Church and then eating a lot of good food. Well, actually not all of it was good, some of it I just looked forward to because we always had it for Easter. My great Aunt’s cinnamon roles were that very thing. I loved eating them because they were a part of the day, but looking back I didn’t love the taste of them much.

Now that I am a Mom and we are hosting our first family Easter celebration at our house, I am excited to create our own Easter feast memories. I decided that I would make our favorite dishes and I asked everyone else to bring their favorite dish as well. There will be 24 of us this year, so it should be fun. I will be making green bean casserole, Resurrection Potatoes, homemade dinner rolls , white cake with chocolate pudding icing, and Darkness to Light Cake. I shared my favorite recipes with my personal tweaks. Happy Easter and God Bless!

Green Bean Casserole

I substitute quite a bit on this recipe because one of my sisters has a soy allergy. Instead of fresh green beans, I use canned green beans. Instead of soy sauce, I use Worcestershire sauce. Lastly, instead of canned cream of mushroom soup, I make a rue of sorts by cooking some butter, flour, and milk. I first cook the mushrooms in @ 3 tablespoons of butter, add flour to thicken that mixture, add enough milk to make it look like gravy. The rest of the recipe I follow.

White Cake with Chocolate Pudding Icing

This recipe is quite simple. Follow the box directions on a Duncan Hines White Cake mix. Let the cake cool. Make a box of instant chocolate pudding and mix with 8 ounces (or more if you like) of Cool Whip. Store in the refrigerator.

Dinner Rolls

I substitute 1 ¼ cup of the bread flour for whole wheat flour.

Resurrection Potatoes

So this is actually a recipe of Ree Drummond’s. She calls the recipe funeral potatoes. I wanted to liven it up and call them Resurrection Potatoes. These are delicious!

Darkness to Light Cake

This is a delicious recipe I found on the Hershey’s website. They call this a Black Magic Cake, but again, I wanted to lighten the name up for Easter. I use a 13x9 baking dish and ice the cake with cream cheese icing. Store this in the refrigerator also.
